I leave the temp gun in my pit bag and just go by ear and smoke. If I temp a motor its after I have tuned it as a reference.
If the engine is running good, has smoke and sounds good...I could care less what the temps are running at. As you state, reference purposes only. Engine temps have many variables such as fuel type, clutch, driving style, etc. which make a big difference between two similar engines in the same climate.
