If the engine stalls on idle or stalls upside down, it's almost always because it is getting too much fuel, it's too rich, so it loads up and stalls.
If it stalls on idle it is the low speed needle.
If it stalls upside down it could be the high speed needle most likely, but could also be the low speed needle.
Either way what you need to do is run the car about to heat up the engine, then pit and physically turn the car upside down to check for stalling, tune a bit the carb, then flip it again etc.
