You can solder two wires to the MMM as usual, put a deans or whatever connector you would like. Then make an adapter to connect to the ESC that series (or parallel's) the batteries.

So in this diagram they did not make the connection in between the battery and esc. I recommend doing that as you can plug the batteries in the adapter then power up the esc at once by plugging in the adapter.
