Two things:

1) Check your throttle exponential. If it's anything different, set it to 0%. My guess is that it's probably in the positive values, and maybe pretty high.

2) The throttle pot in your radio might need to be replaced. You can have the radio serviced by Airtronics for around $30 I believe.
