ESC Rating

I have a question. If an ESC says it's 100A, 80A, 60A, or 45A what is that really telling me? I know it's the continuous current but how does that effect motor limits and so on?

Ideally you want your motors burst rating to be lower than your ESC cont. rating

100 amp burst motor
120 amp cont ESC
