Controller adjustments explanations: noob question

Hey guys, ive been in this hobby for about 2 years now with 3 rc cars. All I do is drive and not really care what the adjustments are on my transmitter besides steering and throttle trim. Since I recently I got my first 8th scale buggy, ive began to take interest into the racing world. I have now began to go to the track more frequently, and I'm improving every time I go there, clearing out almost all of the jumps at my local track. But, I wanna improve my driving style, so this when I began to look at the adjustments on my transmitters. Problem is, I have no idea what some of these mean besides the trims. I would like to know what EPA, dual rates, etc mean. Any help would be greatly appreciated and I would be even more grateful if you guys named out all of the adjustments for me. Thanks

EPA - End Point Adjustment or Travel
Throttle - Used to limit speed either forward or reverse independently
Steering - Used to limit servo travel in each direction independently to protect the servo from being over-driven beyond the cars steering limits

Dual Rates
Used to change (limit) steering servo travel in both directions at the same time, used where you may need a tighter turning circle

Cheers
