I think the other way would work if the ESC had both abilities... but the way your trying seems like a fail

Yes you can. It's the other way that wouldn't work. A motor with no sensor will not run on a sensor only esc.

So as long as I don't exceed the recommended number of winds it should work.

Sure will.
 
It will work. I run a novak 6.5 with a hobbywing 60A sensorless esc. I have been running it for over 18 months and even won last years club st truck open class with it in an associated T3.:)
