Default I need some schooling on Radio Telemetry compatibility and such...

Please help me understand the whole telemetry thing. All these new high end radios have telemetry. Some give you info like temp, voltage etc. Some give you e.s.c. control. I was using a graupner x-8n with graupner esc to be able to change settings. So can of what esc settings can be changed using a futaba set up? Or airtronics

Simple, there is no standard, every brand is using its own technology so no way you can use equipment of other brands.

I think the best setup is a sanwa radio that can do code 10(mt44 m12s mt12rs) paired with a rx482 receiver and code 10(SSL)esc such as the sanwa vortex pro.

This setup will give you full control over the esc on the fly from the remote. As for data you get steering brakes throttle battery voltage esc temp and motor temp IF the motor has a built in temp sensor.

All the data is live and can be recorded to the remote then transferred to the pc. You can view the logs themselves on the remote so you don’t need to transfer them but it’s an option

I think Graupner is the only brand who lets you change their ESC settings through the Tx without the need for a programming card, not sure of any other brand of radio that also makes a compatible ESC to go with it.

I guess you didn't read my reply... short answer is "none"

You must use a Graupner radio in order to change settings on a Graupner ESC, no other brand offers this feature.
