Jaco makes premounted foams. this might be your best bet for easy foam tires

All depends on which surface you may run with your car.

Foams have advantages and such disadvantages.

Advantages:
- Consistent grip and handling all the life of the tyre.
- Longer duration and grip than a comparable rubber.
- Comes premounted and glued (so much less mess and glued fingers, sheeesh!).
- Cheaper than a comparable rubber set and less voodo with the rim and inserts stiffness.

Disadvantages:
- May score and chunk if you brush boards.
- If you're racing seriously, you may need a tyre truer to cut the wheels (if not, you can start as they come from the box and start to use it).

Regarding hardness is what I said, depends on your surface, but I bet for a set of 37/37 or 40/40 (front and rears).

I don't know (check on the appropiate thread) if your rear uprights can accept 30mm rear foams.

I will say this:
The V-one S cannot accept 30mm rear foams with out some modification

if u r going to race, c if the surface is prepped or not.

if it isnt, do not run foams

most people that i know, run their S on Rubber.
the best tyres for the S are Takeoff 27's, and 32's or a combination of both.

But pop on over to the V-One S thread

others there r even more helpful and enlightening.

and if u r just mucking around on the street, USE RUBBERS.

Most common combination regardless of whether its prepped or not are generally 45 front and 40 rear, its a good all round combo and Im yet to see a track that it doesnt run well on.
