Default diff gear fluid

hi! was wondering about gear box diffy fluid. what do the numbers mean? EXAMPLE: i have team associated 7000 cst fluid. what does cst mean and what do the numbers represent? 5000,7000,10,000 ? thanks!

Also it should be noted that 7k CST won't be nearly as viscous as 7k in regular oil weight.
