Both? They serve different purposes.... Though people use towels in place of a mat.
Pit mat protects your table and keeps parts from bouncing around in your workspace.
Pit towel on your lap to keep yourself clean, wipe your hands, parts, etc., as needed.
On the cheap, pickup a yoga mat and cut it as you desire or leave it (for coolness you can glue some neodymium magnets on the back to hold screws.... and old bath towels which almost everyone has.

Hmm
at the track the towell blows away and so I don't use anything. i bareback it on the table. Wait a minute that sounds terrible.
At home I use a big towel because i use the edges to clean stuff. Besides I spray wd-40 and so on. having a special rc pit mat is silly in my opinion, but if you already have a full radio starter box and all that wrap and a 150 dollar car stand a 500 engine, all the extra crap you can find then you gotta have it. I will still laugh at you at the track for buying all that stupid stuff.

Get the mats that are used in kitchen cabinets. It doesn't slide and has holes to allow the dirt to fall through to the table. Cheap and functional.
