Default Head Shim for OS SPEED

I'm rebuilding my OS Speed VZB and I'de like to know what will be the difference if I put one or two head shim? I'm running Trinity 30% of fuel.

Whats happen if I run one shime, and whats happen if I run with two?

Thx a lot!
