Default Motors with removable timing plates...?

I notice some motors have optional removable timing plates such as the Speed Passion. I believe there are other motors that are like that but I can't recall the brand names. Is there a reason why they are design that way? Any advantage?

Other motors come with only one standard timing plate for example the Reedy Sonic. However I don't think these motors are any slower than those other ones.

Why would any one buy a motor that requires him to pay extra for more timing when there are motors out there that comes with a full range of timing adjustment?

Can some one enlighten me on this? I am still kind of new to the hobby.
