Think it depends on what you are trying to clean off. Usually compressed air will get off the loose dirt/dust/debris. A tire/body cleaner will take care of tire compound on the chassis. If you are driving in wet conditions, you probably have some disassembly and more in depth cleaning required.

more water, preferably under pressure, squirt anything that looks dirty.

While at the track, I use a long bristled brush to knock off any loose debris, and the occasional air blast from compressed air but i try to avoid blowing debris into bearings. But after track or race nights, I try and refurb the entire car for the next outing.

This sounds better than using water and what does refurb mean

would mean re-furbish, pull the car down and clean individual items. check your bearings etc.
