On a touring car like a xxx-s, what do you think would be better to have, a high speed servo, or a high turque servo?

You will want something that is both.

Torque should be around 100 oz and the speed should be less than .1 sec @ 60*.

If nothing else, make sure you get a servo with metal gears!!
