What are your opinions on the min. torque that I should run in touring car?

Second part, How well do bellcrank servo savers work with regard to safeguarding those precious gears?

Personally speaking I have found that even standard servos with 3-4kgcm of torque can hold a (rubber tyre) touring wheel in position, although you notice the slower speed in some chicanes.

As far as the bellcrank type servo saver, I have had them on a few Yokomos, maybe a couple of other cars too, and they have been strong enough to break servo gears if incorrectly adjusted, so yes I would say they work. To my mind they are a little more precise than the servo horn type because they tend to have a stronger spring.
