For touring car electric I would recommend a JR 9100S servo.
specs are as follows:
Torque = 150 oz/in @ 4.8V, 180 oz/in @ 6V
Speed = .08 sec /60 degrees @ 4.8V .06 sec / 60 degrees @ 6V
Weight = 2.3 oz.

I'm using a Hitec HS-5965MG. Not high-end as far as price goes, but plenty fast enough for me. Some of the guys are using high-end KO servos, but they tell me that they turn the rate down as they they are too fast?
I've stuck with Hitec as I've never broken one. I used to use their 645 servos, and they took some serious abuse without complaint. Bit slow for carpet racing, though.

currently i have a 9000s in my car and it was just sent back to me from repair unfortunately it needs to go back and get re repaired. it shakes back and forth. it did this prior to sending it in in another car with diffrent radio equipment.I changed the reciever and actually took servo out of the car to make sure it was the servo. i moved all wires away from each other and nothing worked. so i figured i should just get something new send the old one in and when it gets back test it and use it as a back up. A 9100s is definately on the list, but i'm still looking to see what is out there in the high end range

You can never go wrong with a KO.
I currently have some 2123's (7.2V) which are very fast.
I also have couple of 2413's as mentioned above (for my 5cell car)
