Default Screws?

What are the benefits of stainless steel screws over the stock screws that come with the kits?

Shiny and they don't rust. But I've found them to bend slightly more easily than normal steel screws.

Good source for stainless is http://www.fastener-express.com/store.asp

but if you have the money titanium is the way to go. Much tougher and lighter.

No benefits, just look cool. If you want screws with a purpose then titanium screws are the way to go. Very Pricey though, they are lighter then steel as light as aluminum and tuff as nails.
