Newb question but both my mbx Eco and 6r seem to slap the ground after a jump. They actually hit the ground and bounce off the ground a few feet. What am I doing wrong?

thats normal, you can soften the blow by increasing "pack" going to smaller holes in the shock pistons. But then it won't be as smooth in the rough sections....
Time for you to read a ton of stuff. Great question to start with.
