In onroad I was told when I first got a new bearing to clean the grease out and reoil the bearing with bearing oil...
Should that same procedure be used in offroad?

Onroad guys look for the slightest advantage possable, so they get rid of the thicker grease & reoil for less resistance. The reduction in resistance wouldn't be that big of a deal in offroad, but the oil will atract less dust & dirt than the grease.

so from a maint perspective it is still a good idea to do right?
Seems like if it attracts less dirt that would help prolong bearing life...

Not a bad idea, just a little excessive for offroad. I don't clean & reoil new bearings, but I do clean & reoil after every race (once a week)

so that is a question as well...
do you just clean the wheel bearings regularly or do you do the entire tranny as well?

I buy my bearings at Avid for $1 each. I just keep several backups on hand and when a bearing (usually at the wheels) gets gritty, I throw it away and throw a new one in there. I leave the factory grease in them.
Honestly, on each of my cars there are bearings that seem to get bad quickly and some that seem to last forever, so I just make sure to keep the ones that go bad in good stock in my pit box.
I'm on a tight budget like everyone else, but at a buck each, it's not worth messing with them once they go. Once you pry that rubber seal off, it's never going to seal as well anyway, so pitch them and throw a new one in and go drive.
