Default big brushless motors advice

hi anyone know how the brushless rating system works by this i mean the way they rate it is for ex a high kv = high rpm but less torque and a less kv = more torque less rpm what would be the best to go higher rpm or more torque im not sure on this.
also how can you find out the engines max rpm so i can determine the input voltage for max rpm and as least overkill as possible.
because i seen it somewhere that you can go say 22.8 volts which would give a more rpm correct? assuming that the kv rating/v is correct so im just wondering how to determine the max volt input for a recomemnded motor so i dont spend all my money on more cells than needed to run it.

A good rule of thumb is that for most BL motors, you want to stay under 40,000 RPMS. In your example, running 22.8v, you would want a BL motor with a KV rating under 1750. There are some BL motors specifically designed for high voltage operation and can handle as much as 40v with a RPM limit of around 65,000.

Default brushless in relation to cells and voltage input.

oh ok then if i just go 2 battery packs of 6 cells, 7.2 v each i have 14.4 volts and can then go for a larger kv rating and then experiment with adding a cell to each pack maybe to see if it effects performance and more rpm.
any advice for what kv rated motor i should be looking for to run on 12-14 cell's at 14.4 -16.8 volts.
and how do you work out the amperage draw?
