is a capacitor a capacitor? Can I go to radio shack and get any capacitor and use it on my ESC as long as it has the right ratings?

As long as you don't get one that is too low rated voltage and as long as its a polarized cap you should be ok.

if you are searching for a replacement unit. I would use the existing capacitor specs if they are readable and see if the local electronics store has something that matches.
If you are wanting to try something different from what is supplied by the manufacture.
General Rules of Thumb:
- LOW ESR CAPACITOR (Lower the better)
- HIGH RIPPLE CURRENT (LOWER YOUR ESR the GREATER YOUR CURRENT)
- 1000uF to 5000uF is perferable for general purpose use.
- 10V for 2s lipo or 16v for 3s lipo

Primarily, you're looking for one that has the same or higher WVDC. That's really your break-down voltage.
You also want the same capacitance.
Polarized, that's up to you. It's just certain TYPES of capacitors are inherently polarized, such as Electrolytic (the most common ones you find on ESCs), Tantalums, and etc...
But usually, for the same capacitance, a capacitor with a higher WVDC rating would be generally larger in size...
The stuff that you find on brushed motors, those are monolithics, they're not polarized since it's usually an enamel-coated, ceramic surface-mount chip cap that has leads coming out of it...

Just be very carefull, try not connect your battery pack to ESC in reverse polarity. It eventually kill the ESC & the electrolyte cap will burst with flame or fume.
