Is there a particular size I should use behind the engine collet to space my flywheel out away from the carb?

Not really. How much room do you have between your flywheel & rear brake disc? Some car/motor/flywheel/clutch bell combos nrquire several shimms & some require none. I had one combo that needed material removed from the flywheel so it wouldnt hit the brakes.Rule of thumb is eyeball & no I dont mean one poking the other.Assemble the whole shebang loosly & bolt in car then adjust & dont try & make zero slop in the crank by pulling it out real hard it needs to move in & out of the motor some or the bearings will suffer.

Thanks I have to move it because the flywheel is touching the carb just a little and I am having to use like 10 clutchbel bearing washers. I have plenty of rrom to the center diffs.
