its very important it affects quite a bit. like how much traction you have in the front or rear how the rear end turns with the car. i started with 5-7-3 and i just switched to 3-7-1 and wow what a diffrence it made for my driving style. it just depends on how you drive and what will help you

As cheesecake said... are vital to the setup of your car and how it handles it. Do some tests and start putting oils on your diffs and see what differences make it on the track you could amaze how much a different thickness oil can make for the general handling of your car.
Some time ago IIRC on rc411.com posted an article about this, maybe could be handy to you take a look on that article and ordering the issue number just to have the complete article for your reference.

Very very important.
Tires and Oil damper selection are also very important.

I used to fill all the diff in with very light oil (shock oil) with the same viscocity. Ran it few laps then teared down the front diff replacing the thin shock oil with diff oil (3K) then ran it again for few more laps. Did the testing for a whole day to understand the effect and how it handle.
