Man like Mark from powerhousercperformance told me. Throw the temp gun away. Tune for performance and listen to the engine. I ran a speed engine last weekend on a small track and it sounded great no lean bog or high idle, great smoke I thought it was perfect and then it came off the track at 280 so I started messing with it and well I should have left it alone. These engines can handle up to 300 degrees is what I was told. It just depends on if you have it too lean or not. So look, listen and feel the performance. No high lean idle or lean bog and good smoke and power sounds great to me. Everyone always wants to know what the temp is??? If the ambient temp is 35 F then the engine will run colder. If you tune an engine to the 240-260 range that would be like 300+ on a hot 90+ F day. So tune to performance. I know its a hard habit to break. I have my own issues with it too but tune for performance.
