Nobody can tell you what ratio to use but in general people use a ratio around 4 for small to medium sized tracks. For medium to large tracks you want to use closer to 3.0 ratio. The ratio is highly dependent on your motor and should be adjusted based on the track layout. The more sharp turns higher your ratio should be. The more flowing and open the track, the lower your ratio should be.

The TA07 has an internal ratio of 2.05

Spur Gear of 55
Pinion of 28 = FDR 4.03
Pinion of 37 = FDR 3.05

So your pinions should be between 27 and 38 in most cases.
