Hi Dan,
I looked back at some of my setup sheets from 2007 & '08 and found that on Jaco Prisms, I was cutting tires down anywhere around 55.7-56.5mm for high bite carpet. These were generally 1 or 2 run tires though. I also preferred Magenta compound (around 32 shore) front and rear and would sauce the front depending on how aggressive I wanted the car to be.
I would recommend cutting them to 58, try it and see how the car performs. If you feel it's a little too stuck or if it gets tippy, then maybe try truing them down a little smaller. It's a lot better to start big and true them down later if needed than it is to start small and not be able to do anything about it.
