Running in the UK, I found that removing the 2mm plate made the car better over bumpy blown out grass tracks, much like it did on the old Yokomo BX when we used a one piece chassis.
You also have the option of replacing the plate with lead/brass to get a bit more forward drive in low grip conditions.
Raising the rear diff/tower etc. 2mm with the plate is lowering the roll center, I believe. This is beneficial on high traction tracks like carpet/astro, and high bite clay (slicks, maybe bar codes).
