Dirtbikes use tires with larger spacing between the block/tread on mud or loose surfaces because the dirt/mud is less likely to stick and the blocks are able to scoup more(kind of like a paddle) , and on hard pack surfaces we run tires with more tread, and have them closer so you have surface contacting the dirt/clay. If we were to use treads like the hard surface tire on mud or loose surface, they would plug up in a heart beat.
So they are kind of similar concept except dirtbikes do have pin type tires because they would wear to fast and wouldn't grip at all.
