I like a very speedy servo on steering, it matches my driving style and works much better for me than a slower one. Maybe I have very nervous fingers...
Nevertheless enough torque is important, too! I agree with token, donīt use servos below 200 oz/in on steering!

Mine is 0.06 on 60° at 222 oz/in (16kg/cm) on 2S Lipo.
