What is best way to find an air leak on your engine? I'm a mechanic by trade, and on a real 1/1 engine if you have an air leak you pour a bit of water over each of the joins/gaskets/seals one by one...

Go Savage! sure they don't handle that well out of the box, but they are sooo forgiving! You can buy so many hop ups for them to handle better. And unless your property has a nice track surface...
