The amperage goes through the stator of a brushless motor, not the rotor. And ESCs control the motor via voltage, not amperage.

You have to recalibrate a Castle ESC when changing motors? Weird.

ESCs are calibrated to the radio, not the motor. From the instructions mentioned:
