Being sensored or not doesn't matter to a sensorless esc. The only time the sensors are active is when there is a sensor wire attached. Otherwise there is no way the sensors can affect anything.

You can run any motor you want. A sensorless esc doesn't know or care what kind of motor is attached to it. The sensors are only active when there is a sensor cable attached.
