I have always run 25% nitro with 11% lubrication in my current emgine and can only find 20% & 30% nitro in store. Is there risk if I go to a different percentage nitro on the fuel I run. Should I try to find the percentage that currently run online or is it safe to go to one of these other ones.

No, there isn't a huge risk with +/- 5%. I would go up personally.

The only thing you'd need to do is retune your engine. Even if it's the same brand of fuel you'll need to adjust those needles somewhat. Pick a % and retune to the performance you had before and let er rip.
