I'm curious about what kind of schottkys we use?

Amps?

PIV? (and what does that mean)

etc.?

There're many kinds people use. Higher amps capability is better, some peeps solder them in parallel. PIV? not sure about that if it's related to peak voltage, most of the schottky has well over 100V so running at 7.2 that don't matter. Try find a low resistance, high amp ones.

just a note, they should be soldered as close to the motor as possible to make use, as some people solder them on their esc instead of motors for ease of changing motors.

two or more is prefered for low turn motors 789
