LRP Flow and 4mm Bullet Connectors
I know for charging purposes I need to plug to a balancing connector, but instead of installing a DEANS connector to the ESC, can I just solder bullet connectors and plug them directly to the Lipos (paying attention to pos and neg obviously)?

That's the best way to do it. If your esc is inline with your lipo, you have to be mindful of + & -.
If the esc is off to the side of the pack, make the wire lengths to where the negative wire will not reach the positive port or vice versa.
There is a greater chance of crossing polarity with deans.
Bullets, not birdcage style. Birdcage is only for charging.

That's what you don't want to use. Google birdcage connector problem, melted, ruined... you will see why those are only for charging which is a much lower amperage flowing through them than running the car. You will find many sad stories of people that melted the case near the plug port ruining a $??? Lipo.
Use one like this... smc has the best deals on lipo's IMO and these and murfdogg bullets are the best I've used.

Change them out every couple of months, keep a tight fit so you don't arc and melt the case of your lipo. Their $1.00 each... much less than a new lipo pack costs. Cheap insurance.
