Change usb link to v3.4, did a reset of the radio and bind, throttle 100%

Change the sensor cable and motor sensor open the hobbywing and clean

Sounds like maybe Low Voltage Cutoff kicking in. Try disabling it.

Is it worth to update my ESC to the lastest version for mod in touring car? Or aren't there any special changes?

Does it still do it if you run blinky mode? Mine works perfectly with hot motors woth no timing software.

something strange happening...
fire my car up and put it down on the track. do a couple of warm up laps. line up to start the race. go and its gone into limp mode turn it off and on again and its fine for the rest of the race. newish hpi plazma batteries, new vampire motor in blinky so no over aggresive settings. changed the sensor lead twice for new ones.

The sensor lead would be the first thing to change, but you have already done that.
Try a different motor. It might be the sensor board in the motor.
