You need to remove all of the shims from behind the flywheel. You may have to get a different flywheel cone which mounts the flywheel closer to the engine. Remember the closer the flywheel is to the front engine bearing the more room you have left once you stack the entire clutch together.

Pass you soon...

+1 on the flywheel...i ran into that problem where i kept dusting the clutch shoe and realize the flywheel wasn't back far enough

I grind the cone until the flywheel is as close as possible to the crankcase. This reduces the stress on the bearings, as well as give you more space to shim the clutch the right way.
An other option is to use shims on the end of the crankshaft (between crankshaft and thrustbearing spacer).

How did you grind the cone and make sure it is flat bottom ?

I use a Dremel first and 600 wet sandpaper to sand it flat. It doesn't matter if it isn't completely flat, but the flatter the better.

Remove shims @ engine brg and collet. Assemble the centex as normal. Use depth gauge to determine how much endplay you have. Total play i.e. 1.50mm. Shims came with centex kit came with 3x.50 shims. add 2 shim. and reassemble clutch assembly. You should have endplay or .50mm which is in tolerarance of specs.
