Default Help With Differentials & Fluid Weights

I know what the front and rear differentials are all about but not quite sure what the center does exactly. I know the center helps distribute the power to the front or rear of the car depending upon the condition/situation the car is in. but I'm not quite sure how that helps. Coming out of a corner hard I would think the center diff would distribute the power more towards the front end to get that good bite and acceleration??

Second part to this question is in what type of track conditions would you want a thicker oil vs a thinner oil for the front center and rear diffs?

Any help is greatly appreciated!!
