my question is what the lowest amount of power that would be ok. would a stock servo work ok

It would work, but poorly. There are not many things that make as big a difference to a nitro car as a quick throttle servo. It translates to fast throttle response, fast braking response. If you're talking about a 1/8th buggy, get at least 80oz/in. Anything more than 120oz/in is probably overkill for a buggy, a truggy could make use of more though. Speed is what you're after.
