Would stock axial yeti setup work ok for a on road?

If you consider constantly flipping, rolling or spinning around or driving like a '64 on 3 wheels, then yes. The yeti and the losi mini T are by biggest disappointments to date.

I will admit before I get flamed that I am looking into some upgrades to help the drivability but for a rtr out of the box it leafs a lot to be desired, heck it's even difficult to drive in the grass without almost turning the steering all the way down.

I think the O.P . wants to know how the motor and esc that come with the Yeti would perform in an on-road car, like a 1:10 TC for example.
I am still a beginner, but I would consider using that combo in a 1/8 Gt. A slash 4x4 conversion maybe?

Would a Chevy Suburban do a good BTCC racer?

It would TOW a BTCC racer just fine.
