Quick question...

Will a sensorless ESC work properly with a sensored motor?

or will it just make lots of smoke???

works fine

It will generally work by turning the sensored motor into a non-sensored motor. We make only sensored, racing motors; here is an article we prepared on the difference between sensored/non-sensored operation:
