How well do those razorbacks fair in side by side racing? Do they flip and roll or do they just bump and rub?
they bump and rub, but once in a while will flip, probably like anything else.
if you go to fast and try to make a quick turn you can flip them, its better to blip the throttle to do turns.

Will it float or run on water? Are all of the parts replaceable?

it will go on water, but everything should be waterproofed with balloons (typical waterproofing setup) and you have to run a saddle pack (two lipos in parallel.

there are a bunch of running vids on youtube now, some parking lot racing, some just general bashing, and a new one of it running on grass.
probably will be more once its back in stock!
