The main tyre of choice in the UK when wet is the Pit Shimizu D-20 compound tyre, looks a bit like a motorbike tread pattern and is 21mm wide so you use narrower wheels.
Most guys seem to lay front shocks down, rears up, add some front toe-out and soften the suspension etc and possibly use a 1 way.

Forgot, spray some WD40 etc on the outside of the bearings to help stop water getting in them.
Clean the bearings when you've finished racing as they will seize if left.

I can absolutely NOT recommend a oneway in rain...you need the brakes. Trust me!
The bearing thing; I can only concur with Skiddins about them seizing up. There was a funny story at the 2005 Euro's. One of the local drivers had qualified in the rain. When he was done for the day, he prepped the car for the next day and left. In his first main the other day, he discovered that the cars drive train was nearly blocked. He later found out that all the bearings were full of rust.
Morale: always clean your bearings when driving in the wet. It's a blast driving, but every metallic, non-alu stuff (like bearings) will have to be cleaned and oiled afterwards.
