One for sure is the chemistry, the cell we refer to as LiPo are actually lithium cobalt oxide (LiCoO2), LiMn is Lithium Manganese oxide (LiMn2O4). The Manganese is less reactive than the Cobalt so they claim that LiMn is more safe.

Yeah, the LiMn is definitely less reactive than the cobalt. Try doing this with a LiPo...

I'm in the process as well of purchasing some Lipo's and saw the max amps batteries. I would aslo like to know if they are good batteries as I can get 2 max amps for one of the Orions so it makes me wonder.

The maxamps batteries are fine. The big difference between them and the Orion/Peak is the casing of the cells. The maxamps are just shrink wrapped bare cells. They're very susceptible to damage and potential catastrophic failure. The main reason to spend the extra money for the orion/peak is peace of mind. If you get T-boned on the battery side in a heat of mod TC at the end of the straight with the orion, you don't have to worry about it getting damaged. With the Maxamps packs, it's a definite concern...
