I recently purchased a new lathe which had a coarse thread on the cutting knob not the depth of cut knob.
Now with a 55 turn motor, I found that a good cut is made with 4.8V and a slow lateral movement which kinda goes against what a coarse thread is used for.
For a slow cut, would it not be better to use a fine pitch thread?

Well there is actually two speeds. First you have motor speed directly related to Motor turns and input voltage then the second is lateral cutting speed.
Generally, the slower the rotational speed and the slower the lateral cut the smoother the outcome.
So this lathe would suggest a faster rotation and a faster lateral cut but this produced a dog doo cut.
