What is the "right" level? I left my Nitro Stampede stock and after doing some jumps, the cap popped off.

I have the Traxxas big bore shocks on my Slash. I got them as a Christmas present so they've been out for a while. The tops don't pop off, but other than that they are no better than the stock shocks. I'd just do the aluminum caps and call it good. If you are really worried pick up a spare set of shocks off Ebay from someone who is parting Slashes. That seems to be the cheapest place for parts if you aren't in a hurry.
