Default throttle / speed limiter for mini-lst

Need some advice- I've got a mini-lst that I'd like to let my 5 and 7 year old run, as I'm tired of the crap rc cars they get from their grandparents. Even is stock form this this is quick enough for impressive breakage. What are my options to limit the acceleration/top speed? I'd prefer something adjustable so I can dial it up as their skills increase.

Smaller pinion.
Fewer cells, try a 4 or 5 cell battery instead of 6.
A radio that has adjustable endpoints on the throttle, turn it down.

I started my Team Driver on an old Futaba Magnum Jr, that has the endpoint adjustments on very handy knobs. I can even hand it to a curious onlooker and bump the throttle down without them probably even noticing.

tape something behind the throttle trigger. Like a little piece of foam under some electrical tape.
