I believe the 7.5 is around a 12 - 14 brushed mod motor. But don't just think speed, you need to think control as well. Lots of guys were going for all out speed getting 5.5s and were selling the motors to get a 6.5 or 7.5 to have more control. If you really though can control the power, maybe start with a 6.5 . But I think 7.5 would be good.
As for the differences between the two types, the Factory team is full graphite, has titanium turnbuckles, lightened diff outdrives, threaded shocks, etc. Its fully options. Only thing ironically people change out is going to the plastic chassis.
Keep in mind graphite is stiffer and will break easier in hard crashes. Plastic will give more.
If you went only with the regular b4 say used, make sure it has the following:
1. Aluminum Front hingepin brace
2. Titanium turnbuckles ( prefer lunsford over AE brand)
Thats it that I would get right away.

I suggest a 13.5 because it will fit your needs best for racing...

The 13.5 will be similar in speed to a fast stock motor. I believe the 10.5 is similar in speed to a 19 turn motor. I believe there is a breakdown somewhere like this.
As for battery packs, not sure if the new novaks can, but I know the mamba's have the ability for lipo cutoffs on the ESC. Lipos are nice for the longer runtime, though charging safety needs to be more exact from what I have read.
I would say go with a good GP3300 or better pack for your setup and you should be fine.
More background on what you want to do with your buggy will help.

The 13.5 SS pro really flies with 7.4v lipo's. Its more in the 19 turn territory than 27 turn, and you will get almost 20 minutes of run time on a 3200 lipo. If you use the Novak esc, consider getting a lipo cutoff if you are going to go lipo.
